Pork and Peaches

For you grill lovers out there, try this one next time. Get a boneless pork chop for each guest and baste olive oil and sprinkle with salt and pepper to taste. Let stand while the grill is heating up. Once you have the grill up to 350 degrees, place the chops on the grill and cook for 4 to 6 minutes per side, depending on size. During that time, cut in half 1 whole peach for every two people and baste each peach half with olive oil and vanilla extract. Place each half on the grill for 2 minutes or until tender. Remove pork and peaches from the grill and slice the peaches in quarters. Mix the peaches in a bowl with pine nuts, sliced red onion, crumbles blue cheese, and balsamic vinegar dressing. Place the peach topper on the pork chops and serve with a spring salad.
